Simple Summer Tomato Salad
This short and sassy tomato salad not only tastes diving, but adds a colorful accent to any summer table.

- 4 cups cherry tomatoes mixed colors
- 2 tablespoon extra virgin olive oil
- ¼ cup fresh lemon juice
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- fresh herbs to taste - basil, parsley, dill
Quarter your tomatoes. Rinse any excess seeds.
Add evoo, lemon, salt, pepper and any fresh herbs to a large mixing bowl. Add tomatoes. Toss well. Optional: Allow to marinate for 10-20 minutes to soften tomatoes a bit and marinate with flavor.
Pour mixture into a serving dish. Serve! Delicious with warm crusty bread as a side so you can dip up all that yummy marinade.
