I am excited to host this Vitamix giveaway for all the folks who have supported me through the years by buying or borrowing one of my cookbooks. Here are the details!...

Anyone who has ever bought or browsed one of my books is eligible to enter! To enter, you just need to hop over to Amazon and leave a quick star or worded review. Then fill out the entry form below.
(Insider Tip: There are a few of my books available to check out at local libraries, which is pretty cool!)

Why Refurbished? When I visited the Vitamix headquarters a few years ago, I learned all about how closely Vitamix cares for their refurbished machines! Seriously, if you are looking to buy a Vitamix, I would highly suggest considering a refurbished model since you will save a lot of money on your purchase. Of course, the brand new models are awesome too!

Anyway, want to say that I made the Creamy Cashew Potpie (pg. 218) last night and
it was really good! I'm going to make it this weekend for my daughter and her family, but I
might add more liquid in the filling - I think I might like it a bit more juicy. My son is not a vegan (or vegetarian)
and he gave it a thumbs up!!

My favorite go-to is a smoothie I've been making for quite a while with spinach, kale, cilantro, parsley, strawberries, blueberries, pineapple, white grape juice, and milled flax seed. It kind of looks like a mini aquarium before it's all mixed up, but it tastes much better than it sounds and looks!

My favorite go to recipe is a strawberry spinach smoothies. It helps me get my fruits and vegetables for the day!

My favorite quick go-to for busy nights is a simple veggie curry. I use canned chickpeas, frozen veg., a can of coconut milk, a can of diced tomatoes, curry seasoning and additional seasonings to taste. Serve over rice or quinoa. Dinner in under 30 minutes for the family with very little clean-up!

I frequently use whatever organic canned beans are in the pantry and chop in many vegetables like garlic, onion, celery, carrots, mushrooms, bell pepper, spinach, add some dashes of pepper, cumin, and curry and simmer until tender and serve with potatoes or rice and top with a little garlic hummus. My favorite go to recipes are the simple ones! Sauté ginger and onions in evoo then throw in carrots, zucchini, kale, etc. Top with sunflower or pumpkin seeds, an avocado, and/or goat cheese. So good!

You can never go wrong with the Strawberry Avocado Mâche salad, and the Lemon Pepper Fettuccine Alfredo. Easy and quick to make, and sure to impress. In the "I'm way too tired to cook, I just need food now" category is Thanksgiving Sweet Potato Pockets - not just for leftovers! We make them all year.

I love Love LOVE Healthy Happy Vegan Kitchen and would dream of owning a Vitamix. I've currently killed 2 Ninja's because they cannot withstand the amount of daily love (use) I'm laying on them. The Vitamix would solve this. Kudos for all you're doing Kathy to bring us exciting, wholesome food. BTW the Black Rice Peanut Bowl is my fav from this book.
