Vegan Breakfast Burrito

This Vegan Breakfast Burrito is all you need in the morning. I'll attribute that to the inclusion of plenty of pepperjack cheese from Daiya. Any vegan cheese can be used though...

New. I'm a sucker for new products. A new flavor of coconut water, a new flavor of soy ice cream, new this, new that - I'll buy it just to try it. And sometimes a new flavor can be quite disappointing. Leaving you spending money on something only to find out you don't like the "new" version! Example, those plastic bottled coconut water flavors (pomberry and such) - tried them all - and I've learned that I like coconut water "as is" - no new flavors needed. But Daiya flavors...

Luckily, with the new Daiya Cheese pepperjack flavor I was quite pleased. So yummy! In fact, Pepperjack my new fave Daiya flavor.

Breakfast Burrito. Then this morning I did the best breakfast burrito I have ever had. Dive in...

Vegan Breakfast Burrito

This savory breakfast is a satisfying way to start your day. Protein-loaded.

Ingredients

  • 1 tablespoon vegan butter
  • 1 tablespoon tamari
  • ¾ cup bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 14oz firm tofu
  • ½ - ¾ teaspoon turmeric
  • 1 clove garlic, chopped
  • 1-4 tablespoon nutritional yeast
  • salt and pepper to taste
  • cayenne or hot sauce to taste
  • Fold in:
  • 1-2 cups spinach, chopped
  • ¼ - ½ cup vegan cheese shreds
  • Also: large flour tortillas, warmed

Instructions

  1. Add the vegan butter to a warmed skillet over high heat.
  2. Add the mushrooms, bell pepper and garlic. Saute for two minutes. Add in the tofu, tamari, turmeric, nutritional yeast and a pinch of salt and pepper.
  3. Saute for 2-5 minutes until the tofu is fluffy and all the moisture is absorbed.
  4. Fold in the cheese and spinach. turn off heat. Add more salt and pepper and optional hot sauce or cayenne - to taste.
  5. Load scramble into the warmed tortillas and fold up burritos. Slice and serve with optional hot sauce.

    This recipe is fantastic! Just made it for breakfast this morning! My roommate who is a meat and potatoes person lifted the lid on the mixture and said “no bacon?” LOL it was clearly mistaken for eggs! Good for tricking people lol 😁 Finally a tofu breakfast burrito I love!

    Sure. I have updated a few recipes to reflect the simplest and most flavorful recipe versions. Many of my very early recipes used a lot of ingredients and feedback from my readers has been the simpler the better.

    But here is the original for you..

    Vegan Breakfast Burrito
    makes 2-3 burritos

    saute:
    1-2 Tbsp vegan butter
    3/4 cup diced bell pepper
    1 cup diced mushrooms
    18 ounces firm tofu, drained/pressed/diced
    1 tsp garlic powder
    1/8 tsp cayenne
    1/2 tsp black pepper
    1 1/2 tsp tumeric
    3/4 tsp truffle salt (or plain sea salt) - or to taste
    1 tsp olive oil
    2 tsp agave syrup
    1 tsp liquid smoke
    1 Tbsp apple cider vinegar

    fold in:
    1 cup spinach, chopped
    1/2 cup Daiya pepperjack cheese
    2-4 XL tortilla wraps

    1. Add the vegan butter to a hot saute pan. Saute the mushrooms and pepper for a few minutes.

    2. Add in the tofu and remaining saute ingredients (all except the spinach and Daiya). Saute the tofu and veggies for about 5 minutes - chopping the tofu and salting to taste.

    3. When tofu has reached the consistency you like, fold in the spinach to wilt. Turn off heat. Then fold in the Daiya cheese. It will melt against hot tofu.

    4. Warm your tortillas - I toss mine on the stove top flame for 5 seconds each side - be careful if you use this technique! Never leave the tortilla unattended. Just a few seconds each side will warm and scorch the tortilla. You can also warm in oven.

    5. Add your scramble to your warmed tortilla and fold. You can add extra cheese if you'd like. Serve warm. Salsa or hot sauce on side is nice.

      So glad you like it!! I do not have calorie info for this recipe. There are some great online tools for those who want specific calorie content for their fave recipes. If you want to lighten things up, I would just go easy on the cheese. But other than that, this is a pretty healthy burrito! 🙂

    Just found this on Pinterest, looks so good. Have you tried Field Roast Tomato and Jalepeno cheese? I'll bet this would be perfect with it but, it's not shreds. Thanks for a great recipe and all the work you do.

    I'm not a fan of most Daiya but I have to say the pepper jack is pretty spot-on. For my anti-vegan cousin to approve.. it's a very big deal indeed! Try it!!

    OMG! I'm a new vegan its delicious food like this that makes me so glad that I am, This is so delicious!! U gotta try it! I 'm ot a mushroom fan so i used zucchini squash also I used organic baby tortillas because those are the ones i had in the house, also I didnt have liquid smoke so I used smoked parika instead, Thank u so much for this delicious recipe Kathy ur recipes and blog is so awesome!

    only ate tofu once and it was gross.....but i made this anyways and it was soooooo freaking good. I even forced my mom, who doesnt consider meals without meat worth eating, to try a bite and next thing I know Im making a large batch to freeze so she can reheat for a quick breakfast through out the week.
