Rice, Shiitake, Twirl of Carrots and Tofu: Spring is in the Air Salad.

A bed of fluffy micro arugula lays the groundwork for this "Spring is on my Plate" Salad. My play on the fact that yes, spring is in the air..

Spring Served. Spring reminds me of light, colorful salads, so that's what I wanted. Green, orange, yellow. Light, zesty, fluffy. Tender savory shiitake mushrooms mingle with a twirl of carrots and tofu on a bed of brown rice. A gentle accent of pepper, lemon and soy. Craft this beautiful salad in your own kitchen, it is quite an easy recipe...

Vegan Food Blogger Diet. I have come to realize that I do not eat or grocery shop like a normal person. It's all a whirlwind of shopping lists, blog posts, photo shoots, projects, inspirations, leisure cooking, deadline cooking, editing, writing, remembering, correcting, tweaking and eating. Thank goodness I thrive on creative chaos.

Sometimes i feel like Whole Foods is my second home. Like an art student at an art store. My pantry is always well stocked. Not just because I love to cook, but because my kitchen truly is my workspace.

Simple Salad. Or not so simple. Today's quickie recipe post is a simple salad out of a few leftover ingredients I had on hand from a photo shoot. And this was my workweek afternoon lunch. I try not to take for granted the fact that I get to eat my work.

..This salad would not have been my lunch back when I was a stressed out grad student working a 9-5 job. 16 hour workdays left little time for fancy lunch making. My vegan lunch usually consisted of something I'd warm up in the office microwave. Sound familiar? Or sometimes I brought a giant tupperware container filled with homemade (quickly made) pita triangles. Spinach jammed into hummus slathered crevices. A mountain of baby carrots on the side.

Ah yes. Those darn baby carrots got me through many a long afternoon. crunch crunch crunch..

I've come a long way. But guess what, you too can have this salad! Maybe not for a workweek lunch, but a weeknight dinner side or even a weekend lunch picnic. This would be lovely served in the sunshine with a tall glass of iced tea or mint lemonade..

Green Tofu Carrot Asian Spring Salad
vegan, serves 1

½ - ¾ cup cooked brown rice
2 cups micro arugula (or any light greens, regular arugula will work too, or sprouts)
2 lemon slices

saute:
2-3 shiitake mushrooms
¼ cup thinly sliced carrots
⅓ cup thinly sliced firm tofu
1 teaspoon minced ginger
1 teaspoon liquid aminos (Braggs) - or use tamari
fine black pepper
optional: cayenne or red pepper flakes for spiciness
optional: sprinkle of nutritional yeast

Directions:

1. Lay arugula on plate. Add brown rice over top. Spritz with lemon juice.
2. Saute the mushrooms, carrots and tofu in a pan in 1-2 teaspoon of oil. I used olive oil. Add spices and soy sauce/tamari/liquid aminos. Turn off heat when tender.
3. Arrange carrots and tofu in flower shape. Add mushrooms to middle. Add lemon over top.
4. Serve! Eat leftover veggies on the side, pile on to or save for later.

    I pulled up this post right next to a friend of mine who has just started to eat healthier. We've also been cooking and doing dinners a lot together. He saw the picture of the salad and got really excited and said "ooo...can we have that for dinner tonight?"

    Very, very thinly sliced radishes ... amazing how many types there are.  My favorite, the beautiful "watermelon" radish ... lends a great tangy crunch and looks so colorful.

    I love organic baby arugula and use it all the time. Unfortunately, I live in a small college town and stocking microgreens of any type seems to be too much to ask for our local Kroger. I've also checked out our weekly farmer's market and nada... But I love the look of the salad you've created and can only imagine how sweet and fresh those microgreens really are!

    Creative salad ingredient- I am really not that creative with salads- I love the mix of balsamic vinegar and strawberries but I think that is pretty common.  I would love to see something withroasted sweet potato on a salad.

    Parsnips....they add a nice sweet crispy surprise to s traditional salad, and pair well with oranges, beets, pomegranates, all sorts of exotic greens and so on. Thanks!

    I don't know of many creative salad ingredients due to living in a tiny redneck town. ;p So I've never heard of or seen micro arugula.. But I guess I could say beets. I usually smother my salad in beets because i love them so much. Avocado is really good too, especially mixed with ranch.

    The thing for me that makes a creative salad is the dressing. I always make homemade dressing when I can cause it adds an interesting flavor.

    I love grated daikon radish in my salads. If it's grated super fine I put it in dressing for some zip. If coarsely grated I like it as an ingredient/topping.

    Micro arugula is new to me.. I'd love to give it a try! I like to add a touch of sweetness to my salads by dried cranberries, thinly sliced apples. I also like to saute root veggies with a little balsamic vinegar before adding them to the salad. I was just thinking of going to Whole Foods this weekend.. I love their selection.. I usually go there once in 2 months n stock up! Excited about Chloe's new book 🙂

    In summer, I love to add fresh organic basil leaves to heirloom lettuces, sprinach, capsicum, and heirloom tomatoes.  I make a vinaigrette with grainy organic mustard, vinegar of choice, organic garlic and organic EVOO.  For a treat I toss some chopped Gardein Crispy Tenders on top.  Yum!

    I've never been a huge fan of salads because they are usually cold and I love hot meals. However, if I can add a "hot" item like freshly sauted mushrroms, yum my favorite and then hot brown rice helps warm up a salad. Being fairly new to vegetarian/vegan meals I am enjoying your site and would truly benefit from Chole's Kitchen and I'll head over and give her a quick peak too! Thanks so much

    I wish I was taking that salad to work! Some staples for me are edamame, chickpeas, and spinach. I just saw her on the today show yesterday, and am really interested to see what else she can make besides cupcakes. Plus, I kinda have had a crush on her since I saw heron cupcake wars 🙂

    i like citrus in a green salad, peeling the membrane off.  especially in winter when salads can become dull when eating locally, the bright taste of citrus awakens you when you bite into it.  i live in texas and we can get some greens locally throughout the year but what to put on them in the winter?

    Chloe inspires me to try to make on my own delicious vegan foods. She is warm and expressive and makes it all seem so easy to do. More and more I am getting into vegan comfort foods and discovering how great vegan desserts can be. I don't miss nonvegan food at all PLUS NO ANIMALS ARE HURT FOR MY MEALS AND THAT IS TO ME THE MOST IMPORTANT THING.

    Love this giveaway! I'm not really a sweet salad person, i usually pass on the fruit in my salad even though that's a popular choice. I think my favorite thing to add to a salad is beans 🙂 a little corn and black bean mix, or even a chickpeas and quinoa mix! yum.

    I love incorporating different beans into my salads.  Before becoming vegan, I didn't really think about putting them into salads!  But they add so much body and taste that they now have become an integral part of my salads.  Besides "beefing up" the taste, they add so much nutritionally.  I guess as a vegan I have changed the question used years ago in advertising from "Where's the Beef?" to "Where're the Beans?"  🙂

    Hmm, my favorite salad ingredients are nuts- especially walnuts. They go great with raspberry vinaigrette and tomatoes, taco salads, and lots of other combos. I haven't had a salad in a while though, since the weather here is going back and forth like crazy so I'm never prepared when it's warm! It would be so awesome to win Chloe's book-- I love her and I watched her on Cupcake Wars before I went vegan, when I was just thinking about it. She's part of the reason I made the change and she's just so sweet!

    It may be very 1990 of me, but lately I've really been enjoying sun-dried tomatoes in my salads.  I like that they bring a chewy element that isn't sweet.  They also pair so beautifully with my other favorite salad ingredients - artichokes, pine nuts, and kalamata olives!

    Your salad looks yummy! I'm a big fan of texture, so I like to add nuts or seeds & dried apricots & cranberries to most of my salads.
    Have only been vegan for a month now & your site is my go to page for recipes & inspiration! Still have yet to cook with tofu, but I'm getting there.

    My favorite salad topping is (this is reallly weird) the dishes of the night. I just pile all of my food onto a bed of romaine and that makes a perfect "salad" without me noticing, so i get my greens in without having to taste bitterness + it's just mixed in with my food!

    Your salad looks incredible! I can definitely relate to having the grocery store as my second home! Even though I'm still in school, I practically live at the local health food store. Your blog is one of my favorite places for healthy vegan recipes (that even my meat loving roommate enjoys).
