Presidential Sweet Potatoes at Obama Luncheon

Lets hear it for the now Presidential Sweet Potato.

The only veggie to make headline billing on the 2009 President Obama Luncheon menu.

Sour Cherry Chutney also made the menu.

I wasn't too pleased by the lack of *vegetarian options available* side note. But oh well. Yay for the molasses sweet potatoes...

Molasses Whipped Sweet Potatoes
Yield: 2 quarts
Ingredients
3 large sweet potatoes, about 3 pounds
2 tablespoons unsalted butter-->for vegans...
*(Substitute vegan butter or canola oil for vegans)
1 teaspoon kosher salt
¼ cup orange juice
½ tablespoon of brown sugar
1 tablespoon of molasses
1 teaspoon of ground cumin
2 tablespoons maple syrup

    I agree...yay for both! 🙂
    I was very pleased to see a sweet potato mash on the menu. And with molasses???

    I read this rumor too, but since he has a well-known love of BBQ and butter-ridden classic sweet potato pie, I don't think he has gone vegan....yet! He is a health fanatic, so maybe he will try a vegan diet, just like his good pal Oprah.
