My Thanksgiving Menu: Vegan Feast 2009.

You've seen a yummy smorgasbord of my Vegan Thanksgiving recipes over the past few weeks, but now the real work begins! The first step to achieving your perfect feast is menu planning.

Project: Menu. Crafting a delicious, diverse and elegant menu is a fun project that requires analysis, inspiration and a sprinkle of heart. Designing a menu is like putting together a puzzle with too many pieces. You have all the parts, but you also have to know when to edit. You must decide which recipes end up on the chopping-block floor. Double check on any food allergies or special diets. Also consider how many guests to expect and how casual or formal you want your feast to be. Here is my personal menu, shopping list and cooking schedule for Thanksgiving 2009...


***11/24 Update: Made my first and hopefully last menu change: the seitan is OUT and a new tofu dish is IN! Cranberry-Soy Braised Tofu Steaks, to go inside my stuffing fillo purses. The stuffing will sit on top of these braised tofu steaks. See a recipe quip of my new main dish in the main dish proteins post. It is towards the beginning, sorry I do not have a image...yet!)***

So there you have it, my planned out Thanksgiving feast schedule from list to plate. It's always good to have a plan, but it's also important to stay flexible. What is the fuyu persimmons aren't ripe? What if I burn my tempeh bacon? What if the sweet potatoes take an hour longer than expected? And what if the store is all out of vegan cream cheese?! Have a nice back-up plan and plan on making more than you'll need. You can always drop a few recipes last minute if your cooking attempts gets discombobulated.     I wish I was going to your house on Thanksgiving, that's for sure! 🙂 As a vegetarian, there is NOTHING more nauseating than the Thanksgiving turkey. It would be such a joy to go to an all vegetarian Thanksgiving. But thanks for all the inspiring tips!!

    Sara, funny you should ask..because I don't know yet! I know it is at least 8. But maybe more...so as always I will be making more food than I expect is necessary. Because Thanksgiving isn't Thanksgiving without a few leftovers...

    ps. RE your seitan/gravy excitement. If you see my menu post, you might notice an update-I nixed the seitan for a tofu steak. I tried out my recipe and while I loved it, it was REALLY heavy in red wine. I decided it was a bit too rich for my menu. Basically I overnight soaked my seitan in red wine/vinegar/apple cider/spices (garlic, pepper, rosemary, thyme). Then I lightly breaded the seitan and fried them in EVOO. My gravy was a basic brown mushroom veggie gravy with diced shallots added in. I poured that overtop. Good but super rich... Too heavy for Thanksgiving I decided.

    Glad you liked the menu I crafted!

    Sooo, I have to go to KY for Thanksgiving and there's no room for me to cook (they're all omni), so all I get to eat is a tofurkey... in a toaster oven that I have to bring.

Some are direct modifications (like the chocolate mouse-modified from my tofu-chinos recipe). Use the search box to find them for now, I may do direct inks in a bit to help ppl out. Really the only recipe not posted is the seitan with mushroom shallot gravy. I&#39m experimenting with a new recipe, but if it is a hit I&#39ll certainly post in the future...I hope you all are planning to have a healthy happy and tasty Thanksgiving feast!~Kathy
