Happy, Healthy Cinco de Mayo Menu. Fiesta Recipes!

I love Cinco de Mayo because it gives me an excuse to go all out on my favorite Mexican-inspired recipes.

On the Menu: A pitcher of fruity, fizzy red sangria, a few sauteed sweet plantains, a big bowl of spicy guacamole, salsa verde, fluffy red rice and maybe a zesty lime-scented Fiesta salad - sweet corn cake and some simmering black beans on the side. So delicious and quite healthy as well. No time for a big fuss? That's OK, make one or two recipes: Guac, Salsa and Sangria sipping out on a warm porch around twilight? Simple, perfect! Mexican Fiesta Salad with Zesty Lime Agave Dressing


Breads:
Sweet Fresh Scooped Corn Cake
Spicy Pepper/Chile Corn Bread

Cilantro Lime Agave Cornmeal-Crusted Biscuits


Entrees:
Vegan Tofu Verde Enchiladas
Mexican Couscous Power Bowl
Plantain Poblano Tofu Wrap/Burrito


Drink:
Premium Fruity Red Sangria

    MMMMmmmmmmmm!!! I too love Mexican food! Sadly I haven't had much of it since going vegan. My favorite were tamales.
