Entree Salad Bowl: Mango-Avocado Brown Rice Gardein Crispy Tenders

This salad is crazy-amazing. Brown rice, mango-avocado-lime salsa and vegan honey-mustard drizzled crispy tenders - toasty from the oven. And ps, my no "honey" mustard dressing has only three ingredients (link in recipe)..

Today I am featuring Seven Grain Crispy Tenders. I talk to a lot of people who say they want to go vegan, but they still crave familiar flavors they are used to, from animal products. I always point them to Gardein.

Ready to make these salads..

Fluffy short-grain brown rice. You could also use quinoa.

Salsa on top! Load on the antioxidants, healthy fats and loads of flavor..

Mango-Avo Salsa.. (This is also delicious served alongside plantains!)

Mango-Avocado Brown Rice Gardein Crispy Tenders Entree Salad

Mango-Avocado Brown Rice Gardein Crispy Tenders Entree Salad

This lively and flavorful salad is packed with leafy greens, fiber, antioxidants and plant-based protein from Gardein Crispy Tenders.

Ingredients

  • Salad Components for each salad:
  • ¾ cup brown rice, cooked
  • ¾ cup avocado-mango salsa
  • 2-3 cups leafy greens
  • 3-4 Gardein Crispy Tenders, sliced
  • 1-2 tablespoon vegan honey mustard dressing
  • Salsa:
  • 1 avocado, diced
  • 1 mango, diced
  • 1 lime, squeezed
  • 1 small white onion, chopped
  • pinch of salt and pepper

Instructions

  1. Prepare salsa by adding all ingredients to a small mixing bowl and gently toss. Set aside.
  2. To prepare Gardein - follow instructions on bag. My method: Bake on a parchment paper-lined baking sheet at 400 degrees for about 15 minutes, or until crispy brown. I flip them half way through. Cool slightly, then chop.
  3. Prepare brown rice in advance so you can just scoop and serve. You can also use quinoa or another whole grain.
  4. Salad: Add leafy greens to serving bowl. Then top with rice, followed by the mango-avo salsa. Then place crispy tenders on top and drizzle dressing over top. Serve!

Yield: 1 salad
Prep Time: 00 hrs. 15 mins.
Cook time: 00 hrs. 15 mins.
Total time: 30 mins.

    Oh, man. Your salad has me drooling! I love putting the crispy tenders in my salads. I usually do a buffalo chicken style salad with them, adding vegan chia ranch and tons of Frank's! And I'll use the chipotle lime tenders to make a taco salad topping it off with black beans, corn, salsa, cilantro, and a sprinkle of tortilla chips. Okay, is it dinnertime now? 😉

    Favorite entree salad has to be anything with lots of greens and some sort of dried fruit and candied nuts and avocado, and a little bit of fresh berries 🙂

    I love fruit in my salads! I especially love a mix of spinach & romaine topped with sliced strawberries, sunflower seeds, craisins, and homemade balsamic vinaigrette.

    My favourite salad entrée is a grapefruit-salsa-black-bean-and-corn combo! Mmmmm! I love it on spinach or romaine best! 🙂

    Yum! I am always seeking a "hearty" salad recipe. I love Gardein. I like these in a vegan Caesar salad, too. I love their "fish" in fish tacos. I also cannot wait to try your dressing!

    Wow! I'm hungry for dinner, & this salad looks fabulous!! My favorite entree salad is a vegan Asian "chicken" salad. I use the Gardein crispy tenders, lettuce, cabbage, green onions, carrots, cilantro, & a sesame ginger dressing. Sometimes, I add other vegetables like broccoli or edamame if I have them.
