Vegan breakfast time is probably my favorite part of the day. Colorful smoothies that pop in colors of pink, orange, green or purple. Lively fresh cut fruit in big beautiful bowls. Steamy, fluffy tofu scramble scooped from a warm skillet. Deep smoothie bowls with mountains of fun + healthy toppings. Chia pudding parfaits. Warming mugs of lemon tea. Zenergizing matcha lattes. Dreamy vegan donuts, waffles and pancakes. I could go on and on... But instead, onto the fun stuff.

Two Weeks of Vegan Mornings? Easy! It is so cool to be able to work with brands that do one thing: bring delicious fruits and veggies to the world. Rich in antioxidants, phytochemicals, fiber, color and flavor!

Oh how cruel. How am I supposed to pick 3? That's like choosing your favorite child!
    Gosh, ok. Well...
I love me some tomatoes. And tomatoes go well with kale. And citrus, as a category, is simply phenomenal.

So those are the official 3.

And the unofficial rest: honeydew melon, watermelon, rambutan, apples, pears, bananas, papaya, kiwi, FIGS!!!!, grapes, celery, raspberries, gooseberries, strawberries, cucumbers, carrots, sweet bell peppers, cherries, chard, avocado, mango, pineapple, peas, cauliflower, broccoli, green onions, sweet potatoes... I'll stop now.

Wow, Kathy, really? Only THREE?? OK - I'll try 🙂
Well...absolutely avocados. And celery. Summer tomatoes, ...and Spring asparagus...
Oh, but...but there's also summer sweet corn, and October's first Brussels sprouts, lacinato kale, and arugula...and, and, and...raspberries, blackberries, and huckleberries, summer strawberries, and let's not forget blueberries, cherries, peaches, apricots, and bananas, honeydew and honey rock melons, watermelon, mango, papaya, ...and I'd be lost without sweet potatoes, butternut squash, turnip greens, mustard greens, chard, collards, ... oh...and PARSLEY, my love...I know that it's technically an herb, but I regularly eat copious quantities of it in salads, as the "greens" ... and the beat goes on....:D

Dates, satsumas and fresh peaches in the summertime. I love dates all the time but especially when they are really fresh. I really like Deglet Noor dates: smooth and buttery. Medjools are big andhearty. They do make the most amazing caramel! Satsumas are that special orange that has so many uses. I love all oranges but especially satsulmas, cara caras, and mineolas. Peaches are the taste of July along with raspberries. They taste like summer sunshine and fresh air to me. Fruit poetry!

haha you are right. Fungi count too.... Potatoes - I am on SUCH a potato kick the past few months. White, sweet, japanese sweet. I add them to all my soups for texture and thickening, and I even added chunky potatoes to my Mac and Cheez once to delicious results. Made the cheezy mac extra creamy and cozy! I try to leave the skins on white potatoes as much as possible to preserve all those nutrients and fiber.

haha NO . Not cheating, creative thinking! I love stone fruit too. Peaches in summer are my obsession. And I grew up with a very fruitful plum, apricot and cherry tree in my backyard, so I was very spoiled. Plums all summer long whenever I wanted them. I miss that!

It is so hard to pic just three but I would probably have to say Kale, Red Bell Peppers, and Strawberries. Oh but there are so many more

I like the red bell peppers add! They are such a great ingredient! They add color, crunch and flavor to basically and raw salad or even diced on avocado toast or roasted for just about anything. And kale and berries.. yup.

This entry mechanism doesn't work. I'm trying to download the ebook and I'm not seeing any links for it in the Download Ebook section.

You are the first person to say avocados!! That surprised me! 🙂 And I do LOVE that so many people are putting veggies and not just fruit.

Three of my favorite veggies are broccoli, spinach, and brussels sprouts. Three of my favorite fruits are strawberries, cherries, and blueberries. I felt the need to list both my favorite fruits and veggies, haha.

Good move. Isn't it strangely satisfying to list your faves sometimes? Especially when it comes to fruits and veggies? 🙂

Lots of vitamin A in there! You are actually the first person to mention bananas! I could not live without bananas for my fave banana ice cream smoothies and shakes.
