Today I am sharing my recipe for the bowl that wins the "most likely to be devoured" award for all of spring and summertime months. At least that is the consensus in my house, that is. Just dip a big spoon into this big bowl of frosty pink deliciousness and I think you will agree. This is my favorite.

Watermelon Ice Cream. Rich in potassium, fiber, vitamin C and 100% free of high fat dairy -- or dairy of any kind, really. This creamy, frosty blender ice cream is so amazing.

You might think that it is just like a thick smoothie, but it really has such a frosty ice cream texture and flavor because of my secret ingredient: frozen watermelon. You long-time HHLers know I just love my frozen watermelon trick.

Watermelon Blender Ice Cream

Watermelon Blender Ice Cream

This super creamy and frosty ice cream can be made in your Vitamix blender in seconds! Super delicious, with only three healthy ingredients.

Ingredients

  • 2-3 frozen bananas
  • 1-2 cups frozen watermelon cubes
  • ½ - 1 cup non-dairy milk (use as little as possible)

Instructions

  • Add all ingredients to a Vitamix and blend until frosty amazing. See the how-to video in this post for additional tips and a first hand viewing!

Yield: 1-2 servings
Prep Time: 00 hrs. 05 mins.

Total time: 5 mins.

    I usually do a teaspoon for this one. Sometimes less. For smoothies I add more though. I don't like the watermelon to be too overpowered for ice cream though.

    When you add matcha how much do you use & do you add anything else or just the matcha powder? Making this to help cool off tonight BUT want to try it with matcha soon too.

      Just the matcha! 🙂 The bananas and watermelon add enough sweetness for sweeten the green tea taste up a bit.

    Hi there - this looks SO good! I have two questions. 1. I just ordered a Vitamix but it has the shorter container -- will there be a difference in how this turns out (as opposed to the tall skinny container)? And 2. Can you taste the watermelon? I'm always worried about bananas overpowering other ingredients. THANKS!!

      You can always add a higher ratio of watermelon to the bananas for a more watermelon-y flavor. But I always taste the watermelon and use about 1 large frozen banana each time. -- the vitamix tall and skinny container, I personally find has more versatility for blending sauces and small amounts of lights etc. I also find it easier to get really thick shakes. But both containers DO work beautifully. 🙂

      It can! But you may need to chop your fruit a bit smaller to be able to process them - depending on the strength of your machine.
