Ginger-Citrus-Maple Roasted Beets & Apples with Pumpkin Seeds.

These Citrus-Ginger-Maple Roasted Beets and Apples with a ring of nutty pumpkin seeds are so simple, yet quite elegant too. Not to mention super healthy. A subtle hint of warming ginger compliments the bright citrus and apple flavors that mingle with the delicious roasted beets. This dish is wonderful served warm or chilled. I actually prefer it chilled! And that way you can easily make it ahead of time, stick it in the fridge and pull it out when ready to serve. I ended up nibbling on this platter all day long when I made it. I kept going back for more and more. Healthy, sweet roasted beets are a sweet, feel-good food you can indulge in, guilt-free! Try this holiday approved recipe..

I think these guys are really what Michael Jackson was singing about.

Just beet it.

Beet it.

And Apple it.

No one wants to be de-beeted.

Get Back to Your Roots. Are you eating enough root veggies? They are so healthy and detoxifying! Whenever I consume large quantities of carrots, beets and sweet potatoes I just feel BETTER. Cleaner. More vibrant. More energized. Maybe it is all those nutrients. Beets are rich in potassium, magnesium, fiber, phosphorus, iron, vitamins A, B & C, folic acid and more. They also contain natural sweetness which can actually help stave off a sweet tooth. Instead of reaching for a cookie, reach for these beets in your fridge! I know it sounds weird, but it just might work for you. Plus the natural fiber and water in these beets will help fill you up. You cannot say that about a cookie.

    Kathy, this is A-mazing! I tried it last night, and it was delicious, even my husband, who isn't into beets liked it. At our local organic store they are selling both red and golden beets, so I added one golden, yum yum. Can't wait for your cookbook to come out. Thank you!

    Good to know! Actually yes my beets were very very sweet and juicy, easy to slice and tender in their raw state. Cooked quite quickly. Some dreamy beets. I will put a note about time cooking! Thanks 🙂

      Yeah, mine were not so dreamy...big ol' end of season buggers. Not the best ones ever. Mine usually don't take so long. We are definitely making this again, so next time perhaps I'll have better luck with beets or toss the apples in later. Other than the beet issue, these worked perfectly - just as described. Thanks for a great one!

    Kathy, do you actually peel your beets first? Usually, when I roast beets, I leave the skin on and then slide it off after roasting. Don't see anything about to peel or not to peel in here.

      I removed some of the "peel" just because it was very rough on one beet but I usually just keep them as they come, I have never had any issues with the skin. Of course you could easily peel before roasting if you prefer or if your beets are very rough skinned

        Thanks for the tip. We left it on - was quite fine. Just never occurred to me to do so!
        This was excellent, Kathy - my daughter absolutely loved it and the pumpkin seeds are a great touch. We did everything just as you said and I think ended up with a slightly different result - our apples were rather soft, yet our beets were still pretty firm, even though they were tender to a fork test. Also, ours cooked way longer than the 25 minutes you recommended (probably why the apples were so soft) but the beets took forever. The chunks were small - bite size. Must just be particularly tough beets?

    yes the apple adds a bold sweetness and softer texture. It is funny because some of the apples turn bright pink from the beet juices so I bit into a few apple bites that I thought were beets and my taste buds were given a fun surprise.

    I love roasted roots of any kind! I eat roasted beetroot a lot but hadn't thought to pair it with apple. Yum!

    I pinned this already over on Pinterest earlier today. My daughter loves beets and asked for them tonight. I negotiated with her to postpone until tomorrow because it was too late to properly roast them in time for dinner. But this is a winner - she will absolutely love these! And she absolutely loves that we have that pink Himalayan salt - always gets excited when we find a dish that uses it.
