Aloha Salad with Tiki Tempeh.

Tiny umbrellas seemed like the perfect accent to this tropical getaway style salad. My Aloha Salad with Tiki Tempeh is filled with vibrant salad greens, crunchy chopped macadamia nuts, sweet, juicy pineapple and a few thin circles of sweet banana. My creamy vegan Avocado Pineapple salad dressing completes the dish. Top each salad bowl with a triangle of my Tiki Tempeh - smoky, sticky-sweet island fare.

Spring-y & Summery-y Salad. This zesty, bright, fun Aloha Salad is perfect for sunny days. This would taste amazing dining outside with a cool glass on sun tea and some hearty slices of freshly baked bread or toasted pita on the side.

Aloha Salad with Tiki Tempeh

Salad:
1 bag baby spinach
1 bag Romaine Lettuce or Cole Slaw Cabbage Blend
1 cup pineapple, chopped
⅓ cup macadamia nuts, chopped
1 banana, sliced
pepper to taste
optional: shredded coconut

Creamy Avocado Pineapple Dressing:
1 avocado, pit removed
1 tablespoon tahini
⅓ cup pineapple, chopped
½ cup orange juice
1-2 tablespoon oil (I used walnut oil)
2 teaspoon tamari
salt/pepper to taste
optional: add a jalapeno or a few dashes cayenne to make it spicy

Tiki Tempeh:
4 triangles tempeh
2-3 teaspoon maple syrup
½ teaspoon liquid smoke
2 teaspoon tamari
salt/pepper to taste
1 tablespoon safflower oil for saute
1 teaspoon macadamia nuts as texture (optional)

Directions:

1. Add all dressing ingredients to high speed blender or food processor - blend on high. Adjust salt/pepper to taste.
2. Toss the greens with a few spoonfuls of dressing. Do not over dress. You can always add more dressing during serving. Arrange nuts, banana and pineapple over top greens.
3. Tempeh: Heat oil in skillet. Add triangles. Add maple syrup, tamari and liquid smoke over top tempeh. Allow to cook for about 1-2 minutes on each side - until sticky and browned. For quicker cooking, slice triangles into thinner slices before sauteing. Add pepper/salt as desired. You can also add other spices if desired. Turn off heat and add nuts over top hot tempeh - the hot pan will slightly warm the nuts and stick to the tempeh which is still cooling. Once cooled, add tempeh to salad bowl or serve on separate plate.

    I love dried cherries, chopped smoked tofu, diced avocado and pistachios in my salads right now, on a bed of arugula. I do a light splash of lemon and olive oil for dressing. The tart chewiness of the cherries, the smoky dense texture of the tofu and that salty crunch from the pistachios work together really well and the creaminess of the avocado balances everything out. I also add cherry tomatoes and red onion because that's something I put in every salad... great site!

    I really have been loving salads lately and the bigger the better! Farmer's market lettuce of some sort, maybe a bit of cabbage, carrots, tomato, cucumber, zucchini, broccoli, mushrooms, sugar snap peas, basically whatever I can find veggie-wise with a protein (beans and fish are my favorites) on top! Sometimes I even go crazy and mix in grains too 🙂

    My favorite salad ingredients right now is Dole Romaine lettuce w/mixed raw, fresh veggies, such as broccoli, cauliflower, red bell pepper, halved grape tomatoes, shredded carrots, sliced red onions and sesame seeds! I keep a bowl of these right now ready and waiting to add to my lettuce at anytime! 🙂

    Favorite yummy salad at this moment...greens mix of delicious kale, spinach and romaine, sweet red peppers, ripe avocado, crunchy sunflower seeds, a sprinkling of nutritional yeast, homemade croutons and a raspberry vinagrette YUM!

    Avocado-based salad dressing is brilliant!  I'm going to try this with tofu instead of tempeh as well, just to mix it up.  I like to throw mushrooms in all of my salads and any leftover quinoa as well.  Dried seaweed snacks also add a nice kick!

    for some reason, all i eat lately is salad. rather than pretty little lettuce, i use whole hearted spinach. i top usually with bean sprouts, olives, and tomato.

    right now, i'm on a strawberry and spinach kick....last night i added sliced almonds and some dried pineapple and made an amazing strawberry balsamic vinaigrette to round it all out....so yummy!!!  can't wait to try this salad though, days in FL are hot and salad is the perfect dinner food for these hot days!!!

    I like to have a base of greens of some kind, usually kale, with quinoa or beans as a protein source. From there anything that fits into the vegetable category I pretty much will throw in a salad. I really like citrus salads.... apples, mandarins, and avocado are a good mix with tahini dressing.

    As for my favorite salad component so many, I like a salad with hummus gives me my protein requirements ll in one with mixed greens, grape tomatoes, sweet peppers, carrots and thinly slices raw onions and yeah, chives. sometimes I will sprinkle nutritional yeast and have a feast. Great when you can make salad your main meal.

    It's taken me over a year, but i am finally warming up to Salads!  I realized that i enjoy them a LOT more when there is a sweet or slightly sweet element involved.  Lately, i'm digging: smoky Tempeh bacon with maple, dried cranberries, and fresh pears, yay!

    I love making salads in my kitchen with people we usually start with some greens from my garden and then just toss in whatever - cabbage, peppers, snow peas, cheeses, fruits (fresh pear is a favorite) and top it all off with a freshly made dressing with my garden herbs.  The salads are always different and new and fresh.

    My favorite salad right now is a mixed green salad dressed with walnuts, pears, and a garlicky-lemony dressing--but the best part to this salad is roasted zucchini ribbons. If the ribbons are thin enough, they crisp in the oven and add a delightful roasted flavor and papery crispness to the salad. Yum.

    hmmm.. on my salads lately i've been putting..... almonds, walnuts, strawberries, apples, red onions, celery, carrots, and avocado! drizzled with flax oil and balsamic... so tasty! 🙂

    My favorite salad (right now) is spring mix topped with a pineapple quinoa salad, tomatoes, cucumbers, sprouts, and balsamic vinaigrette dressing. YUM!

    I never really thought of adding tempeh to salad, it looks amazing and I can't wait to try it. Vegan is great! I've never felt or looked better! Thanks for the wonderful recipe

    I'm loving roasted veggies of any kind on a salad anymore, even beans!  Last week I made a salad with  sweet potatoes and white beans that I roasted with a little garlic, cumin and smoked paprika.  Piled that on some baby greens with some red onion, tomato, cucumber, crushed tortilla chips, avocado and roasted tomato salsa, and topped the whole thing off with cashew ranch dressing.  So good!

    My salad yesterday: baby spinach, thinly sliced crunchy cabbage, cranberries and caramel glazed walnuts - all topped with a tangy olive oil and vinegar dressing.  It was heaven! 

    p.s. I <3 the cocktail umbrella "stands" - banana slices!  Must try this soon 🙂

    This looks great!  I'm just getting into using more sweet ingredients in traditionally savory dishes and this is a good one to try.  

    My favorite salad these days come from the Whole Foods salad bar on 2nd/Houston - <$5 for a huge salad! -  kale/arugula mix, wheat berries, avocado, roasted peppers, sauteed onions, corn, tomatoes, cucumber, purple cabbage, tangerine vinaigrette and a whole grain breadstick!  YUM!

    Salads seem to be the perfect way to satisfy my quirky desire for lots of color in all my meals (brown on brow? Are you kidding?). I love purple shredded beets with pumpkin seeds and strawberries over spinach with pecans or walnuts.

    Every day one or more of my meals is a salad. [Always dinner, and sometimes lunch too.]  I always buy the Organic Baby Spinach and Herb mix and lots of veggies. I grill them up with spices on my George Foreman (no oil or added fats!) and place them on top. I always buy local, organic, seasonal ingredients, so lately I've been enjoying summer squash, eggplant, cucumbers, and heirloom tomatoes as my additions. 

    My favorite ingredient is always my choice of protein, which has been lemon or orange juiced quinoa this week. I juice a fresh citrus fruit into the boiling water of my quinoa and it comes out SO yummy! 

    As a sweet treat, I might add sliced strawberries or oranges. This adds a piece of dessert into my dinner!

    Spinach
    Kale
    Red Onion
    Bell Pepper
    Cherry Tomato

    So simple, so fresh, so light, soooo good!! I drizzle extra virgin olive oil over it and top with fresh pepper, turmeric, and celtic sea salt:)
