Vegan California Club Sandwich.

This tall stacked Vegan California Club Sandwich is filled with vibrant, flavorful, healthy ingredients. I've added a few predictable "club" ingredients like three slices of toasted bread, tomato, tempeh "bacon" and creamy vegan mayo - plus a few curve ball ingredients as well. Like juicy sumo tangerine slices and perky sauerkraut.

Step inside my club sandwich kitchen and create your own lunchtime masterpiece.

I adore Club Sandwiches. They are the perfect sunny afternoon lunch. And building club sandwiches reminds me of the simple joy of *building things* - like stacking blocks as a kid. Or building sand castles at the beach. Only this creation is edible. I get to stack toppings - as high as I wish.

If I dream it, I can build it. And that phrase applies to more than just club sandwiches. Takeaway life lesson built into lunch 🙂

I like plenty of hydrating, juicy ingredients to combat that plentiful amounts of toasted bread. Tomato, avocado and citrus..

tempeh bacon. smoky, warm and crisp from the skillet1.

Freshly toasted Rudi's organic bread (a la giveaway)..

Thick, juicy Sumo Tangerines. I love citrus on sandwiches! If you take one tip away from this recipe post - try citrus slices on a sandwich! Just make sure the citrus is seedless...

Kathy's California Club Sandwich
vegan

I think you all know how to stack a sandwich - so I'll just give you the ingredients I used and let you go to work in the kitchen!..

Toasted Light Rye Bread
Sumo Tangerine slices (a juicy, sweet variety of citrus - tastes like a giant satsuma)
avocado
sauerkraut
vegan tempeh bacon (you can buy pre-flavored tempeh bacon or make your own with my recipe)
spicy brown mustard
Vegenaise
sliced tomato
missing but loved: sprouts!

    Must try this sandwich! Sounds so yummy (and I've never tried citrus on a sammy!). I've tried things like apple slices & dried cherries, but the tangerine sounds great!

    I love tempeh bacon!! One creative sandwich topping I use is apples I think. Because I'll add them to almost any sandwich!

    I love Rudi's! It's the only bread I buy. My favorite is the Nut & Oat bread. Fantastic! This sammy looks so good... love the unconventional additions. 🙂

    I'm not very creative with sandwiches...in fact, my favorite one is the standard PB&J (although I do switch up the nut butters and jellies) 🙂

    What a wonderful sandwich:  thanks for the recipe.  One of my favorite ingredients is freshly ground almond butter from the health food store, as it is mild & healthy & blends well with almost all sandwich ingredients.

    Thinly sliced cucumbers, yellow or red bell pepper rings and horseradish mustard, with avocado, tomatoes, and sprouts on really good bread makes a delicious sandwich!  I also like olive tapenade!

    Yum! Tangerines on a sandwich? I love it! My favorite ingredient on a sandwich...hmmm probably tempeh bacon. Always gives great texture + flavor

    I loved all the different combinations used to make the sandwiches.  I never would have even thought to come up with those ideas.  Especially the combination of the tangerine and avocado and then add the tomato.  Sounds like something I would love to try.

    Initially seeing that orange on your post mad me do a double take.  I have never thought of that.  I dont really add anything crazy to my sandwiches.  I love avocado on my sandwiches, also onion, I have to say I am not too adventurous on my sandwiches.  But i would say that the most unique thing I put in sandwiches is black olives.

    I love putting bread and butter pickles (and the bits of onions and peppers from a homemade jar) on my sandwiches and burgers. Mix that with vegannaise and it's so good.

    the ultimate best is creamy peanut butter on one half of bread, crunchy peanut butter on the other. both sides drizzled with honey and to give the total crunch factor-potato chips. sometimes i add avocado/cool ranch chips to give it that PUNCH!! been eating them since my college days
