
Fluttering through the produce section of Whole Foods on a seemingly ordinary shopping trip, I fell in love with a head of purple cauliflower. Veggie love at first sight. My eyes locked with those buttery florets of purple - hugged by broad green leaves - and a recipe flashed before my eyes. The most pretty in pink soup ever.
Soon I was swooning over this Pink Cauliflower Soup - a perfect starter dish for a romantic Valentine's Day meal at home. ..or eat a big bowl of it all by yourself. This stuff is so cozy-delicious you may not want to share. 🙂

The recipe calls for shallots, but the picture appears to be red onions. Can you substitute one for the other? Also do you think it'd be fine without vinegar? I can't eat vinegar or anything with vinegar in it (mayo, mustard, ketchup, etc etc)

I saw purple cauliflower on my last trip to Wegmans, sadly I did not buy any 🙁 This soup looks like so much fun. I love cauliflower soup, even if it is boring and white.

This is a great recipe! Could I make a tiny suggestion though? Try using a very fine strainer to strain your soup after you've blended the cauliflower, Your soup will be even more smooth and creamy! You can also use the leftover cauliflower mush for other soups!
