For my breakfast Recipe Rewind I'm featuring my Sunny Mushroom Tempeh Morning Bagel. Velvet layers of citrus-saffron mushrooms meet a maple-crusted tempeh patty. A warm H and H bagel cradles this gourmet AM open-faced sandwich. Or substitute the bagel with an English muffin or sprouted grain toast. Protein, veggies and fiber fill each healthy happy morning bite. Foamy cinnamon soy latte on the side - blissful. And FYI, it's easier to make than you may think. Link to recipe ahead...

Hi Kathy! Thank you. This is fabulous. We love it. I made it for breakfast two days in a row. Instead of using a bagel, I made crispy polenta triangles, and served it with a side of Mango! Oh it was just too good. We can't wait to eat it again. You are marvelous. Thank you from the Cantu family.

I admit I get lazy sometimes and do not want to do breakfast in the week. I want something fast and tasty but I try to make sure it is balanced. I love tempeh and this is just a simple easy breakfast dish I could do on even those lazy mornings.
